Go for one where he may able to sit and watch the world go by either in their grounds or their "out the front restaurant", then if you want to pop out he won't get bored.
My dad is 77 and travels on his own to Bali 2-3 times a year, he mainly does people watching, sitting by the pool, he's done all the tours he can manage and too old for the activities, he loves his food and a drink, and takes the holidays in his stride, talking to his friends he's made over their over the years.
You will find that the Balinese really respect the older people, they love to talk to them, find out how old they are and how they manage to still be getting around. They are amazed that my dad can be so happy.
Maybe the pushbike tour, Baik Bike, not actually on the bikes but he could go in the van that follows the bikes, it's air-conditioned, has food & drinks and goes through some amazing coutryside and ends up with a beautiful meal at the family compound.
Maybe a fishing trip on a locals boat, not so much to fish but to be able to look along the coast at all the "posh" hotels.
I expect Mic may have a few hotel suggestions for you, I'd probably go for one more family oriented and run, smaller and Balinese rather than a huge westernised, full of Australians type.
