It really comes down to which one has rooms available. Both are large beach front hotels with quality restaurants and service.
There are a number of very good restaurants close to the Mercure. Kesuma is possibly the best budget seafood restaurant in Bali,
Sal De Pepe is a great Italian place,
Fortune Cookie (Chinese),
Alise's Restaurant (Japanese),
Mama Putus,
Cafe Artists,
D Corner,
Jepun,
Massimos,
Ming,
Cemara Beach
Donalds,
Bobbys,
Cat & Fiddle,
Gardenia,
Trophy,
Double Dutch,
Caesars,
Stiff Chili,
Little India
plus a number more are all good restaurants within walking distance of the Mercure.
The beach area near the Mercure is quite nice as is the beach area near the Hyatt.
The Mercure and the Hyatt are actually with in walking distance of each other. Failing this the places mentioned above are all within a $1.50 taxi fare from the Hyatt.
Personally I would not stay in either. The idea of arguing over a sun lounge or a chair does not turn me on very much.
