Particularly Balinese or Indonesian in general? The Kumala group ie. Kumala Pantai, Hotel Kumala, Sari Bunga are all owned by a Chinese Indonesian/Balinese family. They respect the religion/traditions of the Hindu Balinese with respect to temples and ceremonies etc. A member of staff once told me that the family is so long established in Bali as to be thought of as nearly Balinese. I know how that sounds to us but he meant it as a compliment! Kumala Pantai has a swim up pool bar the rest I think from memory don't but will serve drinks at the pool of course.
Masa Inn in Poppies 1 is also Balinese owned. Mandira used to owned by Indonesians I think but don't know if it is stil in the same hands. I know there are many more which others will come up with I'm sure.
