A few weeks ago I flew to Bali with jetstar and home with AA:
Both planes are 3 seats + 3 seats.
The seats on AA recline the seats on Jetstar are Fixed
The food on AA is cheaper and you can prebook the food if you like. If you prebook food you get served 1st.
Jetstar serve Alcohol, AA don't
Neither airline has in flight entertainment but You can hire a portable DVD/entertainment type unit with Jetstar but not with AA
If for some reason you need to cancel/no show your flight you get no refund with jetstar but you get the taxes refunded with AA
I can't comment on the fee to "change" the dates on either airline.
You can do online checkin with AA which means you can get to the airport later (not sure about Jetstar)
If they are the same price, I usually go with the one that has the most suitable flight time.
