Have done this all around the world (ie take their stuff out of the mini bar and replaced it with my own) and never had hassles or been charged. I do this many times because I dont like what they have stocked (eg type of beer, wine etc) or because it's so ridiculous expensive that you have to be dying or really drunk to consume it. eg a small packet of crappy peanuts for $17.
