I have in the past bought the knives the locals use (steel blades that rust & have wooden handles) &, while they are very cheap, they aren't well-made & need constant sharpening. They bring back lovely memories, though, when chopping ingredients for a Balinese dinner.
Centro doesn't stock sharp knives at all. The Supermarkets such as Bintang, only have the local ones in my experience. I have a pretty good collection of knives (mainly from Cut It Out) but I am always looking for more - for a foodie too many knives are barely enough.
