We only take cash and obviously don't carry it all around. We have enough with us to change money if we have to but leave the rest of it in the safe in the room. We've been lucky enough at all hotels to have the safe in the room option and not had any problems.
Personally wouldn't bother with travellers cheques, have to carry passport around to cash them in most places and credit cards attract fees, well most do anyway.
