What the Balinese polizi might extort from you (maybe Rp100K) is nothing compared with the costs you will pay if you have an accident & are injured. Even if you have travel insurance (as everyone should) it will not cover you for medical expenses incurred if you do not have a valid license.
It can cost hundreds of thousands of Aussie Dollars to be airlifted back to Darwin. Get a valid license or don't bother getting a bike. Really it just isn't worth it. For what it's worth in almost 3 decades of going to Bali the only motorcycle accident we had was in a back lane in Legian so don't think just tootling around the coastal tourist strip is safe. And don't think it won't happen to you - %^&* happens.
