I think phones are a bit different to normal phones with regards to unlocking them from the carrier.
I am about to do the same thing....unlock from Optus so I can use it overseas.
I am under the impression that once my carrier has unlocked the iphone then I need to connect to itunes and do a restore for the unlock to take effect.
Of course the easy option would be to put in another carriers sim card first to check it. If it appears to be unlocked then you are good to go to bali and get a cheap sim for calls.
If it doesnt work then do a restore through Itunes BEFORE you go to bali and then check if another carriers sim works.
If you want to use data over there, and not just make phone calls and msgs, I beleive you can buy a bali sim with some data availability. That is when you will need to put in the carrier information.
You should google, that is how I have this information although it is untested for me, I am reading over and over that you have to do a restore through itunes once your carrier has unlocked the phone.
One thing I would not do is go to Bali without checking before I left that it was unlocked. :-)
