I am a dinosaur, I know, but when I go to Bali for longer than a few days I take most of my money in Travellers Cheques (with a low limit credit card & debit card for emergencies). No worries about skimming, no worries if hotel staff are light-fingered, no worries about bag theft or credit card scams.
It's a minor inconvenience needing my Passport to change $ every few days (and, BTW, tourists are supposed to carry their Passports with them at all times). But there is usually a reputable money changer close to most hotels. It's just so safe - lost/stolen TCs are replaced within 24 hours.
My husband goes to Indonesia surfing for several months each year & has a special debit card which I top up when necessary. No way we would use our high limit credit cards or a flush debit card in Indonesia.
