I stayed in Seminyak during a visit to Bali two years ago and loved the area; not as busy as Kuta and not as far removed from activity as the Bukit area. Lots of great shops and the beach is nice for long walks. It's probably hard to make a wrong choice on where to stay but I found a great little hotel called Puri Damai off Double Six Rd and enjoyed my stay in Bali so much I'm making the long flight from Canada again this April.
