With a young child I would keep moves to a minimum. In my experience they prefer the comfort of familiar surroundings. It would be easier on you, too, to find a mini-mart closeby to top-up on snacks, and a money changer you are comfortable with, without having to do this three times during a short stay.
Apart from your stay in Ubud, as another poster has said, I think you would be better off in the vacinity of Waterbom Park. There is also the Centro shopping centre opposite Waterbom with a food court and timezone type area on the top level if you need a day out of the sun. The games are very very cheap to play. In this area you would also be close to Matahari Kuta Square that has some good quality childrens clothes.
I would start in Ubud for a gentle introduction for your son and finish down south closer to the airport. Lots of hotel choices in the Tuban area.
