Sorry, don't know about any of your other questions but I do know that it would be easier to do a bike tour from Ubud as it costs extra to be picked up & returned to Legian - and then you drive to Ubud & collect people from their hotels there before the tour starts at a coffee etc plantation then on to Kintimani for brekky on the volcano rim.
Having recently done the Bike-Baik tour (well, from the support van while adult son rode) I think it would be good for a family as there are plenty of stops. Depends on the ages of your kids, of course. Wayan is informative & promptly replies to emails - bikebaik@yahoo.com OR wayansujana@yahoo.com. There is a website - just google. It was rp 350K per person from Ubud, I think. Fabulous day and the lunch at Wayan's family home is excellent, especially the duck dish.
