Deffinately take him White water rafting, Buggy or ATV tour.
Waterbom park is a hoot for those young at heart. Go on your own tour with a driver and pick the spots you want to go to not the standard tour where you end up being offloaded into the hawkers arms.
Go up to Ubud or the mountains for a day out and get away from the tourist areas. How about a day cruise - heaps of fun had here, most have snorkeling gear banana boats and great food all in the price.
You can try fishing - but i have heard it's not miuch chop.
how about teaching him to surf on Kuta beach - some memorable photo oportunities here too.
Book him and mum into a couple spa - heaps avail, Hot rocks for him milk bath for her
