Any decent eating places now are all very clean with salads and preparation of food. They can't afford not to be. Word of mouth will kill their business if you get sick eating at their establishments. Most of them use bottled water now.
As for Arak, I wouldn't touch it with a ten foot pole. Makes you very drunk and very sick. Pretty potent stuff.
