So long as your flight to Melbourne is on time you shouldnt have any issues whatsoever, collecting your bags, walking across one area of the terminal building (3 in one, International is in the middle with Qantas/Jetstar one end and Virgin at the other) and checking into Jetstar for your flight to Bali.
Its real tricky flying Bali Syd Melb as it can be very time consuming collecting bags in Sydney, clearing customs, getting to domestic terminal to catch flight.
