do... Several tours do WWR and elephant rides combined (we went with Bali Adventure Tours) Easily done and enjoyable. We did the '3' with a bike ride as well - great day.
Water sports can be done in a morning. Ours did jetski, parasail and intended to do flyfish (long story why they didn't!) but suggestion is to get there early before 9am and then can easily be done with 2 - 3 hours with not much waiting.
We did Safari Park then on to Ubud for shopping at markets and pm tea. You can easily spend a day at Safari park (take bathers to cool off in their water park) but you can also easily spend a day in Ubud shopping, eating and looking around. Depends how long you want to spend there! You really only need to spend 1/2 hr in Monkey Forest in Ubud but once again you could spend longer walking around and there are some markets/shops further in that are nice to look at.
You will have a great time no matter what!
