Perhaps you are confusing Hindus with Moslems. The Islamic religion prohibits pork. The Hindu religion does not. The vast majority of Balinese are Hindu & pork dishes such as Balbi Guling are part of their festival feasts.
Moslems are in a minority in Bali, unlike the rest of Indonesia, so, in Bali, pork is commonly eaten.
