As far as I know and have experienced they don't check proof of return flight on entry, they take what you write on your immigration card when going in to Bali so you could write the day before. he catch may be your airline over may not allow you to board if you don't have a suitable visa for 31 days but they may not pick that up.
If you get into Bali ok and are appearing to overstay your visa by 1 day you may be asked to pay the fine which I think is US$20 per day per person.
