My favorites are:

Legian beaches are great June/July/August, clean and fun for splashing around and learning to surf, the rest of the year not so clean, December/January really bad. Not so good for snorkelling.

Dreamland is a great surf beach, blue water, white sands (Black underneath) but a lot of people bused in and has lost a bit of its charm since some developers came in. It has a bit of rubbish at this time of year (they do clean it). Also, waves are very high, they have removed the Bungalow accommodation so the only place you can stay is at the new Kuta Condotels.

Balangan Beach is private at this time of year(no vendors trying to sell you anything or offer a massage), still has the beach huts and palm trees, cows and natural bushland but the accommodation is not 5 star, so not sure what you are after. It has a bit of rubbish on the sand at this time of year, was there yesterday and water is really clear, great little cove for snorkeling (watch the current), was only 2 other people and taking their dogs for a walk and 2 surfers. You are a little remote, not much to do but lay on the beach or swim or snorkel, but real tropical setting to do it in, very quiet.

Nusa Lembongan, - Dream Beach is the prettiest, but a small island so you can travel to any beach quite quickly. Ive run around the whole Island in 1.5 hours.

Nusa Dua resorts always keep their beaches clean, tide goes out for a lot of the day so you can do shallow snorkeling, they have jet skiing etc, I have never stayed there but have visited.
