However, in the current climate, I get the feeling that some good deals can be had by booking flights and accom. seperately.
It largely depends on your circumstances.
A single experienced traveller is certainly better off this way in my view, whereas an inexperienced family might prefer the peace of mind of a package, albeit a bit more costly.
A good way to go can be to book flights, and then use the net and forum to get a couple of nights accomodation, just so you have an established base to work from.
Then do a bit of shopping around, walking in and inspecting properties, try to judge their vacancies situation and strike a bargain (Don't forget to get inclusive, tax, service, breakfast, late check out etc etc).
Not as "secure" as a package, but can lend to the experience, provide additional fun and can save a decent amount of money if done properly.
Good luck with it, but choose the booking method to suit your personal circumstances.
