After Kuta/Legian/Seminyak you'll find CD VERY different! Much quieter, and not much in the way of night-life.
Vincents is great - good food and draught Bintang! Also the coolest jazz music. Then there's Toke (same owners as Vincents), but try other places. We make a point of checking out different restaurants around CD, and sometimes you can get a pleasant surprise!
Shopping - try the markets at Amlapura and Klungkung: full of surprises. Plenty of sightseeing at both these places and don't miss the water palaces , esp Tirtagangga and Ujung. Visit the pre-Hindu village of Tenganan.
Talk to a local fisherman and treat yourself to a boat trip to White Sand Beach (Pasir Putih) and Blue Lagoon. Go for a drive to Amed and if diving is your bent this is the place for you. A short trip to Padang Bai and you can take a ferry to Nusa Pedina, the island you can see off the coast at CD.
Take a few books - relax, sit by the pool at your hotel. Just take the opportunity to unwind. You'll enjoy the experience!
