I'm sure you'll love the Melia ... we've stayed there 12 times or so now.
Wouldn't rate the rooms as 5 star maybe 4 but the gardens, facilities and service make up for that. The Melia has its own stretch of sandy beach (as do all the hotels on the strip) and a magnificent pool.
Hotel food and drink is as expensive as any other major hotel but you can walk next door to Bali Collections (new name for the Galleria) where there are a number of restaurant options at more economical prices, or you can walk to Bualu village just outside the southern main gates of the Nusa Dua complex and you'll be able to eat in restaurants, buy local goods and visit tailors ... all at the price you would pay at Kuta or Sanur.
Bali Collections has a number of shops, a supermarket that is a bit more expensive than normal (captive audience), and the Japanese department store, Sogo.
If you're hanging out to visit Kuta it's about 15-20 minutes away by taxi and Sanur is about 30 minutes away.
Have a look at the links from TripAdvisor that show other peoples thoughts on the Melia.
Have a great time.
