I've done the following over the years, it's not everything i've done but it may help.
Horseriding on the beach, through water and through villages
Tandem harley bike tour
White water rafting
Ocean rafting
Boat trip to see dolphins
Sunset dinner cruise
Submarine trip
Actually, quite a few different boat trips.
Tandem para gliding off Bukit cliff
Most importantly the things experienced while participating in life in Bali :) Watch out for any full moon temple ceremonies. They are very very special.
