No, it's not possible to legally ride a motorbike in Bali with an Australian learner's permit; you must have an International Driving Permit (obtained in Australia and stamped for motorbike use). This can only be obtained if you have a full motorbike licence.
However, it is possible to arrange a motorbike licence in Bali through the Tourist Police. They have an office opposite the beach on Jalan Pantai between Kuta and Legian.
The cost is Rp350,000 for one month and is renewable monthly.
A word of caution; some travel insurers will not cover motorbike accidents if the insured does not have a motorbike licence from their country of residence.
