I am slightly older than your mum and have been travelling as often as possible to Bali for the last ten years - mostly solo. You know your mum, and whatever you choose will be appreciated, and I'm sure she will love Ubud and have a truly memorable birthday. Personally, I would choose the Saraswati - in the middle of town, very pretty, and a little bit of the Arabian Nights!
