If you arrive at 10pm on the Monday, your 7 days are up at 9.59pm the following Sunday. By 2pm the following Monday, you're up to 7 days and 16hrs.
You won't get away with the 7 day visa, no matter which way it's counted. But dennisc is right, the day you arrive is counted as one full calendar day, no matter what time you arrive. The same goes for when you leave - if your flight is at 5 past midnight, the whole day is counted.
