First time I went to Bali I wondered the same questions re bartering, even though I'd had trips to Thailand before. When you realise what the dollar is worth in rupiah, you tend to be a better barterer (imo). I always think 'what would i pay for this', knowing at home what I would pay and I think what 81jac said is a fair idea, go half of what they say first and make your way up. I found it a little strange at first but after a while its fun and the Balinese are wonderful people that way and when you realise that say 80,000 rp which seems alot is only $10 or close to it you start to have a better grip on bartering.
I remember paying over 100,000 rp for a pair of sandals in my first week (innocents abroad!) whereas I got more sandals like it for half that price later. Its all the experience and you smile and think this is wonderful coz you're not being ripped off, you're learning how others live!
You will enjoy Bali more than you could ever imagine!
