If you do have to pay overweight you will get a receipt.
To receive payment for overweight the airline needs to issue a document called MCO. This is standard for all IATA airlines. The MCO number will be inserted in your booking and you are entitled to receive a copy of the document called "passenger receipt". Here you will see total kilos charged and total amount to pay.
I works as a travel agent, so trust me on this.
Tthere is no way that airline staff would collect this money in the restrooms or any other place, unless they tried to pocket the money themselves. Next time, make a scene and report it.
You will not end up in Kerobokan prison, if you refuse to pay a bribe :-)
