Dont know which day tour to book

HI
Im trying to book a driver and would like maybe 3 day trips.
Half a day or full days???
Would like to see again Monkey forest ubud shopping lunch and rice fields
Also Nusa dua and water sports like parasailing etc
Also Safari
and somewhere maybe a dinner at Jim Bay.
How long would each day or what could I add together.OR WHAT HAVE I MISSED OUT ON.
ONly have 9 days and there is my husband and 14 year old daughter.
Dont want to push ourselves. please help me.
