If you pay in Bali - you'll pay in Rupiah. Take the rate of the day offered by your credit card company; or as obtained through street exchangers! If you're paying through the internet, by credit card - just pay! Your credit card provider will use the interbank rate of the day - quite the best you'll get anywhere - a wholesale rate in fact!
Double processing on Bali is rare!! They're 'hungry' but not voraciously so!!!!
