Rice is gluten free, Indonesians don't eat dairy, I am gluten and dairy intolerant and when living in Indonesia had no problems at all when sticking to the local diet. Eggs are another matter, they are used quite a lot as a protein source. However you should be able to avoid them if you identify the local dishes that use eggs.
