Hi Kaz
Publisher is designed for printing material at home for a desktop printer - it isn't professional quality and most printers won't touch it with a ten foot pole.
If you're going to re-create, I suggest using Adobe In Design, not Photoshop. (Photoshop is designed for image enhancement, not PDF creation. It will take you longer and won't look as good.)
Your finished artwork will need to be sent as a high resolution PDF with all high res images in order for you to get a good print.
And yes, I work in printing, so I know my stuff. If you're investing in printing, I'd suggest having high quality artwork to start with.
