I was in that area in August 2006. At that time, hotels were in general not full. Since then, however, tourism picked up considerably in Bali and August must be one of the busiest months in Bali.
For myself, I prefer also to plan ahead (I do quite some research on which accomm to choose) and to get the best price upfront. Also, what is typical for Bali, published rates are usually considerably higher then what you can get by comparing different websites. Calling 'last-minute' will certainly result in a special price if there is room available, but I am pretty convinced that the walk-in price is not generally better then what you can get upfront.
