I am sure there are many places that ensure, as best they can, that their buffet won't make anyone ill. But I avoid them, especially the outdoor ones. I (& others with me) got very sick from eating at a buffet at The Oberoi years ago & you couldn't pay me to eat at a buffet anywhere anymore, especially where the food is being kept warm in bain maries or over a small flame.
I'd rather eat from a street seller where the food is cooked in front of me - never ever become ill from eating at such places throughout Asia.
