As in Oz, you can either do much of the organising yourself, or contact one of the many Bali Wedding planners. If you use the planners, they of course will charge you accordingly as they are doing all the work. We managed our own vow renewal ceremony for about 40 people and I was able to do much of the organising by email and everyone that we dealt with was very proffessional. $7000 is quite a decent budget to work with! If you have time, I would decide what area you want to get married at (Legian, Seminyak, Sanur)then fire off some emails to the major hotels and ask about their wedding packages. What we did was hired this beautiful villa for 3 nights (all the family stayed there $1200.) hired a wedding planner for the Ceremony itself, (about $800)and then got Annie from Sanur Deli to do the food and grog (about $3000) We had about 40, and there was extras to pay for(always is!). Weddings are a big business in Bali now so you should be able to get some competitive prices for packages.
