I think that one of the best things about bali is the ease with which you can travel to the different regions of Bali and the diversity that the different towns offer.
I have stayed in Phuket twice and while I enjoyed our stay (at bang tao) there wasn't the same range of restaurants (thai, thai and just for a change, thai) plus getting around was much ore time consuming.
Patong is a horrible place - it makes Kuta seem well planned and tasteful.
The beach resorts are lovely but there is a sense of isolation from places and the local people that you just don't get in Bali
There are a range of tour e.g. elephants, phi phi island etc and
I would go to phuket if you haven't been before but only if you are after a beach holiday where you stick around the pool for most of the time.
