Bali is becoming a desirable destination. It's hard to tell if places are actually fully booked or just that some wholesalers have certain allocations which gives the impression that a hotel is fully booked. Depending on the deals you may find that flight plus accom deals throug an agent may be similar cost to pre booking everything yourself.
Remember too that if you fly Jetstar you have to pay now, not in 6 months time.
