Only ever do we book the first 2 nights, then we hire a car and start driving. We have been at all different months of the year and never had trouble. You will find a lot of small hotels that are not mentioned on the forum have vacancies, its mainly just the ones that are advertised in Australia that fill up. You will be fine, we get there on 31st May and have no accomodation booked but will head to a small homestay in Sanur and stay a few nights before we start to travel.
