You don't need a guide to enjoy some fabulous walks in the rice fields.
Check out the lovely path to Organic Sari and the Champuhan Ridge walk. You can walk to both of these from the market in Ubud.
Just ask anyone at the tourist office or even the shopkeepers. Very easy to find.
