food poisoning can happen a long time after ingestion of contaminated food but most people only think back to their last meal to identify the cause. Depending on the toxin or bacteria etc. that was the cause will govern how long the symptoms take to present.
The symptoms can take a couple of days to present - in the case of your father it may not have been the chicken, rather a meal taken in the lat couple of days. It may not have been any food but may have been an airborne rather than food based contaminant!
