The exchange rate in Ubud these days is the same as, or insignificantly more than in the southern tourist areas.
Just uphill on your left as you leave UVH is a money changer whom we have used, but our favourite is Jineng Tourist Service on Hannoman Street at 22X which is right up at the corner. Lovely ladies, very helpful and with none of the tricks you would find in Kuta.
I think that there is only one supermarket in Ubud. It is up the (steep) street from UVH and at the main road corner where the market and palace are turn right. The worst of the walk is now behind you and you will eventually find it on your right, a bit less than a kilometre I would guess.
Although there are no taxis in Ubud there are plenty of drivrs and it should not be too hard to find one who suits your needs and with whom you can bargain a reasonable, rather than the more common unreasonable rate, in return for regular work.
