I think your kids would have a ball at Hard Rock - I didn't find it that noisy actually - think sound proofed well. Bands are on every night at Centre Stage which the kids can go to as it is sort of in the foyer/entrance of the hotel, fantastic pools, across the road from the beach and close to shopping. Sounds like it has everything you want.
