What you do is right click on the blue name above and click on properties. You will see the email address. Highlight the part of the actual email address after the no spam bit, right mouse click, copy, ok then paste the email address into your outlook/outlook express new email, then attach your photos of the menu (preferably resized for email).
(Another way is to click on the blue posters name using right mouse click, copy shortcut with left mouse click, then paste the address into your new email, remove the no spam part of the address with delete or backspace)

I actually wondered how you would go with extracting the email addresses so I sent each poster a copy of the weekday and weekend menu that I have taken.
