As I know my stuff - but have really/honestly little knowledge of Balinese "traditional" food. I always think real food comes from the home and you often dont get to experience that.
Perhaps Im on the wrong track do you think ? Do what I know best.. ?Since I had this idea ...Over the past year Ive been sussing their family tastes out. They love Eel for eg but hell I have no idea how to do that one, they love "spicy" but not hot. I have this page of scappy notes. They love Chicken but its not in their affordable zone.
Like DennisC has suggested above I might just seek help and just do stuff my style. Well it could be an exchange of culinary experiences.
