Some answers to your questions...I hope they help!
1. They will either hold up a sign with your name or hold up the sign of the Tour Company you have booked your transfers through.
2. Dont change money here - exchange rate is much better in Bali..even the hotel rates are better than the rates here!
3. The beach is fine to swim in at Nusa Dua - you will see many people in and out of the water. If you are worried just stick to the shallows, its probably sensible to do that anyway.
4. Depending on where you are staying in Nusa Dua, I would go out of your hotel perimeter and get transport that way as most Nusa Dua hotels charge exorbitant prices for transport into Kuta etc from their transport stand. We found it much cheaper to walk out of the hotel grounds and hail transport that way.
5. Nusa Dua is a beautiful spot. There are many restaurants to eat at outside the hotel area and also outside the Nusa Dua gate complx they have shopping either side of the road. Eating and drinking at the Nusa Dua hotels is a lot more expensive. We had breakfast included so we would eat a huge brekkie and then go for dinner outside the complex most nights. Not many hawkers in Nusa Dua as they are not allowed - but you do get some on the beach, but they dont really hassle you at all. Although we loved staying in Nusa Dua - it does get to be a bit tiresome travelling into Kuta/Legian etc when we wanted to hit the shops. Still we didnt need to do that everyday so all up it balanced out.
