I agree to go with the flow. How long are you going to Bali for as there is plenty to do??
It might be a good idea to not plan your holiday too much before you go, but to have a list of things you would like to do. If you are staying in Ubud, you may want to go to the Casa Luna cooking school. I think it is about 250,000 RUP (~$32AUD) for half a day.
For more specific tours such as this, it might be a good idea to research and possibly book before you go. For the white water rafting, I highly doubt you will need to book before you go. Tickets are much cheaper on the street than in brochures (I think I paid 25-30 AUD which included buffet lunch and transfers from the hotel).

The night market in Seminyak is meant to be pretty special (I might be able to tell you more about this in late Jan as I'll be in Seminyak in mid Jan for a couple of days.

For the palace dancing in Ubud, it does not always have to be at the palace. When I went, I found going to a local temple was fantastic along with knowing the money went directly to people of the local community.

For snorkelling, I have heard that Amed is great for that, not to mention it is like Bali was 50 years ago (chickens on roads). The best thing about Amed is I was not asked once to buy anything!!, plus the locals were even more friendly than normal (if that can be possible). Only problem is unless you want a long day it might be better to stay there overnight.

MY BIGGEST SUGGESTION IS: Dont do everything on your list so you have to come back!!! : > )
