The cockfighting isn't staged for the tourists benefit. It is something the locals do. It would happen if I was there or not.
I think it is worth reminding people that your own values/morals are not always reflected in societies/cultures you are visiting. Surely the point of travelling is to broaden your horizons and experience things. I doubt I will come home preaching the benefits of cockfighting - but I might have an understanding of why/how they do it and I think I will probably enjoy the experience as well (I will feel a little sorry for the bird though).
