You can certainly do them in 1 day, The Elephant Safari Park at Taro is only 20 mins from Ubud, you could see the monkeys on the way there or on the way back which ever suits.Please be aware that some of the follow up's to your question, are by indonesian drivers and guides touting for business not Australian travellers, it's not to hard to see why!!!.
