You could still use their package deals and not use the hotels...just hand the vouchers into the hotel and say you won't be staying, then at least they get paid and know they can let the room out. This way you get the cheap flights and get to stay where you want.
Another suggestion is phone Garuda direct in Perth 92145100 and book just flights. You don't have to pay until 4 weeks before you fly and the money saved in your bank in interest will cover any over pricing at the travel agents. Also depending on the US Dollar rate the taxes can work out cheaper.
